I am cooking at Fairview, in Laura Queensland. I decided to keep a blog of all my cooking as a record of what I have cooked, and also a collection for a book sometime.

I had filled my space quota with WordPress, and went seeking a free blog site when I found Blogger on Google. This was fine, but then I found I couldn’t share the link anywhere. So I went back to WordPress and paid the amount to make Sunrise Today active and usable again with 4 times the storage.

The situation is that I now have a blog on blogger which is blogspot… but I cannot share it. I have spent all morning checking the settings and have ticked everything. If its not working I will give up and come back to WordPress and start a new blog here…which is what I should have…

Chicken curry, Lentil curry and Rice

Chicken Curry

Fry an onion. Add chopped chicken and cook till brown.
Add spices…Crushed chillies, curry powder, cumin, coriander, masala garam, ginger, garlic, curry leaves, cinnamon, cloves, cardamoms, salt. Cook over heat until fragrant. Add water and squeeze a lemon or add vinegar, and simmer gently 1-2 hours. 
Because the curry was very hot, I added some cubed, boiled potatoes. Optional.
Serve with Rice and vegetable curry

We got the barbecue working and Colin did the cooking. He very efficiently oiled the plate and cooked the steaks first, then the onions and finally the sausages/ We took them inside and had potato salad, Coleslaw, Watermelon salad, lettuce, tomatoes and beetroot. I had also made a Pasta bake with minced meat and cooked, carrots with peas, steamed cabbage and mashed potatoes.
It was a wonderful meal

Savoury Rissoles
Cook onion in oil. Add chopped onion and grated carrot. Add mince, 3 eggs, sliced tomato, salt and pepper and grated cabbage. Add fresh breadcrumbs and mix well. Form into balls, Dip into flour and then beaten egg and Breadcrumbs and cook in hot oil.
Serve with gravy, Potato bake, steamed rice and fresh salads.

Potato Bake.
Slice potatoes, place in salted water and simmer 5 minutes. Drain and place in baking tray. Add sliced onion and bacon and cream and mix well. Bake 30 minutes until golden

Chicken and Vegetable curry with Yellow Rice

 Fry onions, add sliced carrots and add spices…Curry powder, cumin, masala, fresh ginger and garlic, chilli flakes or paste…and cook until fragrant. Add curry leaves, cinnamon sticks, and rampa.

Add the chicken pieces, and cook a few minutes Top with stock or water and the juice of a lemon. Simmer gently for 2 hours…Before serving you can add coconut milk or serve with yoghurt

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 tablespoon sugar (optional)
  • 1/4 teaspoon salt
  • 1 3/4 cups milk
  • 1/4 cup vegetable oil
  • 2 eggs, separated
  1. In a large mixing bowl, combine the flour, baking powder, sugar and salt. Make a well in the center of the mixture.
  2. In a small bowl (or I use a large liquid measuring cup) combine the milk, oil and egg yolks. Beat to break up the yolks and combine.
  3. Pour the liquid ingredients into the center of the dry ingredients. Stir just until moistened – the batter will still be lumpy.
  4. In another bowl, beat the egg whites until they have stiff peaks.
  5. Add about 1/3 of the stiff egg whites to the waffle batter and stir in in to combine and lighten the batter. Add the remaining egg whites and gently fold until no white streaks appear.
  6. Heat a waffle maker to high.
  7. Cook the waffles according to the directions on your waffle maker.
